Sharing Recipes--Blueberry Loaf


Enjoy this quick and easy-to-make loaf throughout the day. Have a piece with yogurt for breakfast or save it for a snack later in the day.

Ingredients

1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 cup margarine
1 cup sugar
2 eggs
1/2 cup milk
1 tsp vanilla extract
1 cup fresh or frozen blueberries

Procedure
  • Preheat the oven to 350 degrees Fahrenheit.
  • Sift the flour and baking powder into a large bowl.
  • In a separate bowl, cream together the sugar and margarine
  • Beat in the eggs, milk and vanilla.
  • Add the flour mixture to the cream mixture.
  • Fold in the blueberries.
  • Pour into a greased loaf pan.
  • Bake for 50-55 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 15 minutes before removing the loaf from the pan.
