Ingredients
2 eggs
5 egg whites
4 cups shredded zucchini
1 1/2 cups shredded mozzarella cheese
1 cup chopped onions
1/2 cup grated Parmesan cheese
1/2 cup all-purpose flour
1 tbsp chopped fresh dill
1/4 tsp baking powder
Procedure
- Preheat the oven to 350 degrees Fahrenheit.
- Coat a 9" x 13" non-stick baking dish with cooking spray.
- In a large bowl, beat together the eggs and egg whites.
- Stir in the remaining ingredients.
- Spoon the mixture into the prepared dish.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes.
- Cut into squares
