Sharing Recipes--Banana Muffins

Baking doesn't get much easier than muffins.

These banana muffins make a delicious and simple change of pace for breakfast and afternoon snacks. They can be made in large batches and stored in air-tight containers or frozen for future use. And, it's cheaper and healthier than making a trip to Tim Horton's or the mall.

This recipe is an old-family favourite which can be easily whipped up in less than an hour.

Ingredients

3 large bananas
3/4 cup white sugar
1 egg
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour
1/3 cup melted butter

Procedure
  • Preheat oven to 375 degrees Fahrenheit.
  • Grease muffin tins.
  • Mash bananas.
  • Add sugar and slightly beaten egg.
  • Add the sifted dry ingredients.
  • Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 muffins
