Sharing Recipes--Carrot Ginger Soup

This light soup is quick and easy to prepare. Because it is pureed, its consistency is like that of a thick cream soup.

Ingredients

5 cups chicken broth
6 large carrots, sliced
1 large onion, sliced
2 cloves garlic, minced
1 tsp ginger, chopped or grated
Zest of half a lime
Juice of one lime
Dash pepper

Procedure
  • Combine broth, carrots, onion, garlic and ginger in a large pot.
  • Cover and bring to a boil.
  • Simmer partially covered for about 15 minutes, stirring occasionally.
  • Use blender or food processor to puree the soup.
  • Add lime zest, juice, and pepper.
Makes 6 cups
